 American corn/Green giant tinned corn, drained1 Cup (16 tbs), cooked in salted water
 Tomato puree1 Teaspoon
 Ground cumin1⁄2 Teaspoon
 Water1⁄2 Cup (8 tbs)
 Red capsicum1 Medium, seeded and finely diced
 Jalapeno chili/2 fresh green chilies1 , chopped fine
 Onion1⁄2 Small, finely chopped
 Coriander leaves1 Cup (16 tbs), coarsely chopped
 Salt To Taste
 Lemon juice To Taste

Directions

Mix together tomato paste, cumin, and water.
Add corn and the remaining ingredients and salt and lemon juice to taste.
Use at once or refrigerate up to several hours.
