 2 boneless whole chicken breasts (about 12 oz. each) skin removed, split in half
 Green onion1 Tablespoon, finley chopped (Herb Filling:)

 Ground coriander1/4 Teaspoon (Herb Filling:)
 Garlic powder1/8 Teaspoon (Herb Filling:)
 Pepper1/8 Teaspoon (Herb Filling:)
 Pineapple chunks1 Can (10oz), drained (Herb Filling:)
 Water1/4 Cup (16 tbs) (Herb Filling:)
 2 tablespoons low-sugar orange marmalade
 Cornstarch1 Tablespoon (Herb Filling:)
 1 tablespoon no-salt ketchup
 2 teaspoons reduced-sodium soy sauce
 White wine vinegar1 1/2 Teaspoon (Herb Filling:)
 1/2 teaspoon low-sodium instant chicken bouillon granules
 Seedless green grapes1/2 Cup (16 tbs), halved (Herb Filling:)

Directions

Pound each chicken breast half to 1/4-inch thickness.
Set aside.
In small bowl, combine all filling ingredients.
Mix well.
Spread about 1 teaspoonful filling over each chicken breast half.
Fold in sides and roll up, enclosing filling.
Place breast seam-side down in 9-inch square baking dish.
Add pineapple chunks to chicken.
Set aside.
