Ingredients
6 Chicken thighs, boneless, skinless
1/3 c quartered, quarter inch thick Bacon dices
1/4 c flour
1 tsp dried thyme
1/2 tsp salted
1 tbsp olive oil
6 c quartered creamy musrooms
2 c carrots, quartered
1 c dry red wine
1 c low sodium chicken broth
1 tsp tomato paste
Directions
Combine flour, thyme and salt in a plastic bag and add chicken to it.
Shake the bag to coat flour on the chicken.
Remove chicken and remove excess flour.
Heat oil in a pan.
Add chicken and cook until golden brown from both sides.
Remove chicken from the pan and set aside.
In the same pan, add mushrooms, carrots and bacon.
Saute for 2 minutes.
Stir in wine,chicken broth and tomato paste.
Let it simmer.
Add chicken and cook until it is done.
