Chilled Cucumber Ring Salad Recipe
Ingredients
| Unflavored gelatin | 1 | |
| Cold water | 1⁄2 Cup (8 tbs) | |
| Salt | 1⁄2 Teaspoon | |
| Cucumber | 1 Large, pared | |
| Onion | 1⁄2 Small | |
| Cottage cheese | 3 Cup (48 tbs), creamed | |
| Cream cheese | 1 , softened | |
| Mayonnaise | 1⁄2 Cup (8 tbs) | |
| Celery | 2⁄3 Cup (10.67 tbs), chopped | |
| Nuts | 1⁄3 Cup (5.33 tbs) |
Directions
Soften gelatin in water; add salt; heat and stir over low heat until gelatin is dissolved.
Cut cucumber in half and remove seeds; grate cucumber with onion and set aside.
Beat the cheeses, and stir in gelatin.
Add remaining ingredients.
Pour into a 1 quart ring mold and chill overnight.
