 UNCLE BEN'S CONVERTED Brand Rice - 4 cups, cooked
 Seeded cucumber - 1 cup, finely chopped
 Plain yogurt or sour cream - 3/4 cup
 Onion2 Tablespoon, finely chopped
 Balsamic vinegar1 Tablespoon
 Dried dill weed - 2 teaspoons
 Salt1 Teaspoon
 Black pepper1/4 Teaspoon

Directions

MAKING
1 Rinse the hot cooked rice under cold running water to cool.
2 Drain well.
3 In a large bowl, combine cooked rice with remaining ingredients, mixing well.
4 Cover and place in the refrigerator until well chilled for about 4 hours.

SERVING
5 Serve chilled.
