Cool As A Cucumber Salad Recipe
Ingredients
| UNCLE BEN'S CONVERTED Brand Rice - 4 cups, cooked | ||
| Seeded cucumber - 1 cup, finely chopped | ||
| Plain yogurt or sour cream - 3/4 cup | ||
| Onion | 2 Tablespoon, finely chopped | |
| Balsamic vinegar | 1 Tablespoon | |
| Dried dill weed - 2 teaspoons | ||
| Salt | 1 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
Directions
MAKING
1 Rinse the hot cooked rice under cold running water to cool.
2 Drain well.
3 In a large bowl, combine cooked rice with remaining ingredients, mixing well.
4 Cover and place in the refrigerator until well chilled for about 4 hours.
SERVING
5 Serve chilled.
