carrots, sliced
 
frozen beans
 
potatoes, sliced
 
broccoli
 
100gm sweet corn
 
chopped parsley
 
1 broth cube
 
Dressing:
 
lemon juice
 
red pepper seeds
 
green pepper seeds
 
coriander seeds
 
3tsp olive oil
 
salt

Directions

Boil water in a saucepan, and add the carrots first. Cook the carrots for 5-7 minutes to make them tender. Gradually add other vegetables. But do not overcook them. Drain well and put the vegetables in a large bowl. Add the corns and mix well.

Dressing:
In a small bowl add the parsley, salt, lemon juice and freshly grond pepper seeds. Mix well. Add the olive oil and mix again. Pour this dressing over the salad just before serving.
