Consomme Printanier Recipe
Ingredients
6 cups Beef or Chicken Consomme
3 tablespoons each julienned turnips and carrots, blanched and drained
1/2 cup each cooked green peas and julienned French-cut green beans
Minced fresh chervil
Lemon slices
Directions
Bring consomme to boil, add turnips and carrots and cook until almost done.
Add peas and beans and reheat.
Vegetables should be tender-crisp.
Sprinkle with chervil and serve with lemon slices.
