Consomme Brunoise Recipe
Heavenly, superb, outstanding, are just some words to describe Consomme Brunoise. The French Consomme Brunoise is a delight to serve and enjoy. Ingredients
1/4 cup each finely shredded carrots, leeks and turnips
1/4 cup each thinly sliced celery and cauliflower
2 tablespoons butter
6 cups Beef or Chicken
Consomme
1/4 cup minced fresh parsley
Lemon peel slivers
Directions
Saute vegetables in butter until just tender-crisp.
Heat consomme and add vegetables.
Stir in parsley and garnish with lemon peel.
