Consomme Recipe
Ingredients
1 pound lean beef, cut into 1 inch cubes
1 pound lean veal, cut into 1 inch cubes (1 pound cut-up chicken with bones may be substituted)
6 cups water
1 carrot,chopped
1 stalk celery with leaves chopped
1 onion, chopped
4 whole black peppercorns
2 whole cloves
1 teaspoon dried herbs (your favorite)
1 1/2 teaspoons salt
Directions
Combine all ingredients in slow cooker.
Cover and cook on low about 10 hours.
Clarify soup by pouring it through several layers of cheesecloth.
Skim off fat.
Serve very hot.
