Conji Recipe
Ingredients
| Rice | 2 Tablespoon | |
| Cold water | 4 Cup (16 tbs) | |
| Lime juice to taste | ||
| Black peppercorns | 1 Teaspoon | |
| Salt | 1 Teaspoon | |
Directions
Wash rice well but do not remove all starch.
Place in a pan with water, salt and black peppercorns.
Bring to boil and lower heat.
Simmer till rice is overcooked.
Remove from heat and add lime juice.
Serve in soup bowls.
This is the original conji and is a good dish on a cold day when one is feeling hungry.
Chopped coriander leaves, green chillies, onions and even small pieces of meat can be added as variations.
The famous pish pash has evolved from this dish—created by the Goan cooks for the Parsis.
