Congee Soft Rice Recipe

Ingredients
3/4 cup long grained rice
1/4 cup sweet or glutinous rice
8 cups water
Directions
Wash the rice in two changes of water and then add the 8 cups water.
Bring to a boil, turn down the heat, cover and simmer for about 2 hours, stirring once or twice every 20 minutes, when it should be thick and smooth.
Serve with salted nuts, scrambled eggs, bean curd cheese, jo sung and pickled vegetables, or anything which will spice up the bland rice.
