Confetti Turkey Salad Sandwich Recipe
Ingredients
1 cups diced cooked turkey or chicken (8 ounces)
1 small sweet red pepper, cored, seeded, and finely chopped (1/2 cup)
1/2 cup frozen corn kernels, thawed and drained
2 green onions, including tops, sliced (1/4 cup)
1/2 cup plain low-fat yogurt
3/4 teaspoon ground cumin
1/8 teaspoon salt, or to taste
8 slices whole-grain bread
Directions
In a large bowl, combine the turkey, pepper, corn, green onions, yogurt, cumin, and salt.
Spread about 3/4 cup of the-turkey-salad-on-each-of 4-bread slices.
Top with the remaining bread slices and cut each sandwich in half.
