Confetti Turkey Salad Sandwich Recipe
Ingredients
2 cups diced cooked turkey or chicken (8 ounces)
1 small sweet red pepper, cored, seeded, and finely chopped
1/2 cup frozen corn kernels, thawed and drained
2 green onions, including tops, sliced
1/2 cup plain low-fat yogurt
3/4 teaspoon ground cumin
1/8 teaspoon salt, or to taste
8 slices whole-grain bread
Directions
1 ln a large bowl, combine the turkey, pepper, corn, green onions, yogurt, cumin, and salt.
Spread about 3/4 cup of the turkey salad on each of 4 bread slices.
Top with the remaining bread slices and cut each sandwich in half.
