Confetti Summer Salad Recipe
Ingredients
| Zucchini | 1/2 Medium | |
| Yellow pepper | 1 Medium, cut into thin strips | |
| Sweet red pepper | 1 Medium, cut into thin strips | |
| Green onions | 2 Medium, sliced | |
| Whole kernel corn | 16 Ounce, drained | |
| 1/2 cup reduced-calorie Italian salad dressing | ||
| 1/2 cup hot salsa | ||
Directions
1. Combine zucchini, sweet peppers, onion, corn, tomatoes, salad dressing, and salsa in a large bowl.
2. Cover and chill 4 to 24 hours, stirring occasionally. If desired, serve salad on radicchio leaves or garnish with purple flowering kale.
