Ingredients
| Red, Green and OR Yellow Peppers - 6 small, seeded and cut into quarters | ||
| Onion | 1 Medium | |
| Mushrooms | 2 Ounce | |
| Cheddar Cheese 1 cup, (about 4 ounces), shredded | ||
| Bacon - 2 rashers, cooked and crumbled Green Onion - 1 tablespoon | ||
| Pimiento | 1 Teaspoon | |
Directions
MAKING
1. Mix the onion and mushroom in a microwave proof bowl and microwave at full power for 2 minutes, covered with microwave safe plastic wrap.
2. On a microwave proof plate place the peppers and microwave at full power for 3 minutes covered with microwave-safe plastic wrap. Rotate the plate every 1minute to assure all the peppers are cooked evenly from all sides.
3. Allow the peppers to cool down a little, put the onion and mushroom mixture on the peppers, top it with cheddar cheese and microwave uncovered at full power until the cheese melts, approximately for 2 to 3 minutes
SERVING
4. Serve hot garnished with crumbled bacon, sliced green onion and pimiento. Excellent snack with drinks and even a healthy one for kids.
