Confetti Nut Bread Recipe
Ingredients
1 egg
1 cup granulated sugar
1/3 cup brown sugar, firmly packed
2 tablespoons salad oil
2 1/2 cups regular all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon soda
1 cup water
1 cup chopped mixed candied fruit
1 cup broken nut meats
Directions
Beat egg; gradually add sugars.
Stir in salad oil.
Sift flour and measure.
Reserve 1/4 cup flour to mix with fruit and nuts.
Sift remaining flour again with baking powder, salt, and soda.
Add water alternately with dry ingredients to egg mixture.
Add fruit and nuts that have been thoroughly dredged in the 1/4 cup of flour so that each piece of fruit will remain separate.
Place batter in a well-greased and floured loaf pan and bake in a 350° oven 1 hour.
Remove from pan and cool on rack.
