Confetti Coleslaw Recipe

Confetti coleslaw is a mixed vegetable coleslaw. Made with assorted veggies, the confetti coleslaw is flavored with buttermilk and yogurt dressing. Dilled to taste with a little added mustard, the confetti coleslaw is chilled and tossed to serve.

Ingredients

 
1/4 cup plain low fat yogurt
 
2 tablespoons buttermilk
 
2 teaspoons grated yellow onion
 
2 teaspoons prepared yellow mustard
 
1 teaspoon sugar
 
1/4 teaspoon caraway seeds
 
1/4 teaspoon black pepper
 
1/8 teaspoon dill weed
 
3/4 cup coarsely shredded green cabbage
 
1/2 cup coarsely shredded red cabbage
 
1/4 small sweet green pepper, cored, seeded, and sliced lengthwise into 1/4 inch strips
 
1/4 small sweet red pepper, cored, seeded, and sliced lengthwise into 1/4 inch strips
 
1/2 small carrot, peeled and coarsely grated

Directions

In a large bowl, combine the yogurt, buttermilk, onion, mustard, sugar, caraway seeds, black pepper, and dill weed.
Add the green cabbage, red cabbage, green pepper, red pepper, and carrot; toss well.
Cover and chill in the refrigerator for 2 to 3 hours, tossing occasionally.
