Confetti Bean Casserole Recipe
Ingredients
| 1 lb. dried small red or pinto beans | ||
| Chicken broth | 3 1/2 Cup (16 tbs) | |
| 1/2 lb. small smoked cocktail sausage links, halved | ||
| Garlic | 1 Clove (5gm), crushed | |
| Onion | 1 Small, finely chopped | |
| 1 red or green bell pepper, chopped | ||
| Parsley | 2 Tablespoon, chopped | |
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| 1 cup cooked whole-kernel corn | ||
Directions
MAKING
1. In a slow cooker, add beans, chicken broth, sausage, garlic, onion, bell pepper, parsley, salt and pepper.
2. Cover the cooker and put it on LOW.
3. Cook for 6-7hrs. until beans are tender.
4. Add corn to the cooker 30 minutes prior to turning the heat off.
SERVING
5.Serve hot
