Concord Grape Pie Recipe

Ingredients
| Grapes | 7 1/2 Quart | |
| Sugar | 1 1/2 Cup (16 tbs) | |
| Quick-cooking tapioca | 3 Tablespoon | |
| Butter | 1 Teaspoon | |
| Salt | 1/8 Teaspoon | |
| Pecans | 1/2 Cup (16 tbs), chopped | |
| 1 recipe 2-crust pie pastry | ||
Directions
Slip grape skins from pulp, reserving skins.
Place pulp in saucepan; bring to simmering stage.
Remove from heat; sieve to remove seeds.
Add enough pulp to skins to make 3 1/2 cups after settling.
Combine sugar, tapioca, butter, salt and pecans; mix well.
Add to grape mixture, stirring thoroughly.
Pour into pastry-lined 9-inch pie pan.
Cover with pastry.
Bake at 425 degrees for 15 minutes; reduce heat to 400 degrees.
Bake for 30 minutes longer or until brown.
