Ingredients

 1 1/2 pounds conch meat, thinly sliced
 Olive oil3 Tablespoon
 Garlic2 Clove (5gm)
 Onion1 Small, thinly sliced
 Stalk celery1 , minced
 Tomatoes2 Cup (16 tbs)
 Tomato sauce2 Tablespoon
 Salt1/2 Teaspoon
 1/2 teaspoon each of ground oregano and basil
 Bay leaves2
 1/4 teaspoon hot pepper seed (optional)

Directions

Cook conch in boiling water for about 15 minutes; drain.
Put conch, oil, garlic, onion, and celery in skillet and brown well.
Remove garlic and add next 3 ingredients.
Cover and simmer until conch is tender.
Add remaining ingredients and cook for 5 minutes longer.
Hot pepper can be omitted, if preferred.
