Company Yankee Pot Roast Recipe
Ingredients
| 4 pounds beef for pot roast | ||
| Salt | To Taste | |
| Water | 1/4 Cup (16 tbs) | |
| Onion | 1 Medium, sliced | |
| Turnip | 1/2 Cup (16 tbs), diced | |
| Carrot | 1/2 Cup (16 tbs), diced | |
| 1/4 cup sliced celery, with leaves | ||
| Parsley | 2 Tablespoon, chopped | |
| 1/2 cup cooked peas | ||
| Sliced mushrooms | 1 Can (10oz), drained | |
Directions
Brown meat on all sides in heavy kettle, adding 1 tablespoon shortening if necessary.
Sprinkle with salt.
Put a rack in kettle under meat; add water and onion.
Simmer, covered, for 3 1/2 to 4 hours.
Add remaining ingredients except peas and mushrooms.
Simmer for 30 minutes, or until vegetables are done.
Then remove meat and thicken liquid with a flour-and-water paste if desired.
Add peas and mushrooms and heat.
Season to taste.
