Company Potato Casserole Recipe
Ingredients
| 6 medium-sized potatoes, peeled | ||
| Sour cream | 1 Cup (16 tbs) | |
| Cream of chicken soup | 1 Can (10oz) | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| Curry powder | 1/4 Teaspoon | |
| 4 hard-cooked eggs, sliced | ||
| 1/2 cup soft bread crumbs combined with | ||
| Shredded sharp Cheddar cheese | 1/2 Cup (16 tbs) | |
Directions
Cook potatoes whole in boiling salted water until tender; slice about 34 inch thick.
Combine sour cream, chicken soup, salt, pepper, and curry powder.
Cover bottom of a 2-quart casserole with about one-third of the potatoes.
Top with a layer of egg slices, then a layer of the cream mixture, using about one-third of each.
Repeat layers to use all of the potatoes, eggs, and cream mixture.
Sprinkle bread crumb-cheese mixture over top.
Bake, uncovered, in moderate oven (350°) about 30 minutes, until heated through and browned on top.
Makes 6 servings.
