Company Cauliflower Recipe
Ingredients
| 2 (10 oz.) pkgs. frozen cauliflower | ||
| Water | 2 Tablespoon | |
| Olive oil | 1 1/2 Tablespoon | |
| All purpose flour | 1 Tablespoon | |
| 1 cup small-curd cottage cheese | ||
| Cheddar Cheese | 1/2 Cup (16 tbs), shredded | |
| Milk | 1/2 Cup (16 tbs) | |
| 1 (2 oz.) jar sliced pimento, drained | ||
| Salt | 1/2 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Cornflakes | 1/2 Cup (16 tbs), crushed | |
| Paprika | 1/2 Teaspoon | |
| Dill weed | 1/2 Teaspoon | |
Directions
In 2-quart casserole, place cauliflower and water; cover.
Microwave at high (10) 5 to 7 minutes until tender.
Drain and set cauliflower aside.
In same casserole, combine oil and flour; stir in cheeses, milk, pimento, salt and pepper.
Microwave at high (10) 3 to 4 minutes until mixture thickens and cheese melts.
Stir after 2 minutes.
Add cauliflower; stir well.
Combine cornflakes, paprika and dillweed; sprinkle over cauliflower.
Microwave at high (10) 3 to 5 minutes until hot.
Microwave at high (10) 5 to 7 minutes until tender.
