5 cups grated carrots (about 2 pounds)
 
3/4 cup thinly sliced celery
 
2/3 cup dark raisins
 
DRESSING
 
1/3 cup nonfat or reduced-fat mayonnaise
 
1/4 cup frozen apple juice concentrate, thawed

Directions

1. Combine the carrots, celery, and raisins in a large bowl, and toss to mix well. Combine the dressing ingredients in a small bowl, and pour over the carrot mixture. Toss to mix well.
2. Cover the salad and chill for several hours or overnight before serving.
