Come Lee's Vermicelli Recipe
Ingredients
24 ounces Chinese vermicelli,broken into 6 inch lengths
1 tablespoon Oriental sesame oil
1 cup light soy sauce
2 teaspoons hot chili oil
1/2 cup fresh lemon juice
Freshly ground black pepper to taste
2 tablespoons rice vinegar
2 tablespoons sugar
3 cups halved cherry tomatoes
4 teaspoons grated fresh ginger
3/4 cups minced scallions
Directions
Place noodles in large bowl; add boiling water.
Soak until soft, about 15 minutes.
Drain noodles; rinse under cold water; drain well.
Set aside.
Combine soy sauce, lemon juice, vinegar, sugar, ginger, sesame oil, chili oil and pepper and stir until sugar dissolves.
Just before serving, pour sauce over noodles; toss to mix well.
Add tomatoes and scallions.
Toss gently and serve at room temperature.
NOTE TO COOK: Prepare noodles and carry to party in covered container.
Prepare sauce and carry in separate container.
