Combination Seafood Chow Mein Recipe

Ingredients
1/2 lb (225 g) crisp-fried fresh egg noodles
1/4 lb (110 g) shrimp meat, deveined
1/4 lb (110 g) scallops
1/4 lb (110 g) prepared squid
1/4 lb (110 g) sliced fish fillets
1/2 tsp (2.5 ml) chopped fresh ginger
3 tbsp (45 ml) cornstarch
3 tbsp (45 ml) light soy sauce
3 tbsp (45 ml) sherry
5 tbsp (75 ml) oil
1/2 tsp (2.5 ml) salt
4 stalks Chinese cabbage, cut in 1 inch (2.5 cm) pieces
1 cup (250 ml) sliced bamboo shoots
6 oz (180 g) straw mushrooms, sliced lengthwise
Directions
1 Arrange crisp-fried fresh egg noodles on serving platter and keep warm.
2 Combine seafood, ginger, cornstarch, soy sauce and sherry, toss to coat.
3 Heat 3 tbsp (45 ml) oil. Add seafood and stir-fry 2 -3 minutes. Remove from pan.
4 Heat remaining oil. Add salt and Chinese cabbage stalks, and stir-fry 1 minute.
5 Add cabbage leaves, bamboo shoots and mushrooms. Cover and cook 2 minutes.
6 Return seafood to reheat.
