Com And Broccoli Stew Recipe
Corn and broccoli stew is a simple and healthy vegetable stew. Prepared with added potatoes and bacon for flavor, the corn and broccoli stew is cooked with milk. Flavorful and filling, it makes a great side with rice or bread rolls.
Ingredients
1 slice bacon, chopped
1 small yellow onion, chopped
1 small all purpose potato, peeled and cut into 1/2 inch cubes
1/2 cup skim milk
1/8 teaspoon black pepper
3 cups broccoli florets
1 1/4 cups fresh or frozen whole kernel corn
Directions
In a 12 inch nonstick skillet, cook the bacon over low heat until it begins to brown about 3 minutes.
Add the onion, cover, and cook over moderately low heat for 5 minutes.
Add the potato, 1/4 cup of the milk, and the pepper; cover and cook until the potato is almost tender about 7 minutes.
Add the broccoli and the remaining 1/4 cup milk and cook, uncovered, 5 minutes longer.
Add the corn and cook for 3 minutes or until it is heated through.
Add the onion, cover, and cook over moderately low heat for 5 minutes.
