Colusa Corn Muffins Recipe
Ingredients
2/3 cup (160 ml) skim milk
1/3 cup (80 ml) melted butter or margarine
1/2 cup (120 ml) honey
2 eggs
1 1/2 cups (355 ml) whole wheat flour
2/3 cup (160 ml) cornmeal
2 1/2 tsp (13 ml) baking powder
1/4 tsp (1 ml) salt
Directions
In small bowl, beat together milk, butter, honey and eggs.
Set aside.
In large bowl, stir together dry ingredients.
Add honey mixture.
Stir just enough to barely moisten flour.
Do not overmix.
Spoon batter into paper-lined or greased muffin pan cups.
Bake at 350°F (180°C) for 20-25 minutes.
