| Basmati rice | 1 Cup (16 tbs) | |
| Water | 2 Cup (32 tbs) | |
| Carrots | 1⁄2 Cup (8 tbs), diced | |
| Frozen green peas | 1⁄2 Cup (8 tbs), washed | |
| Oil | 2 Teaspoon | |
| Ghee | 2 Teaspoon (Clarified Butter) | |
| Cinnamon | 1 Small | |
| Cloves | 4 | |
| Green elaichi | 1 (Cardamom) | |
| Black cumin | 1 Teaspoon (Kala Jeera) | |
| Salt | 1 Teaspoon |
Directions
GETTING READY
1 Rinse Rice with water until water runs clear .
2 In a bowl, add 2 cups water and soak the rice for 15 minutes.
MAKING
3 In a pot with a tight fitting lid, heat Oil and Ghee.
4 Add Cinnamon, Cloves, elaichi and kala jeera, allow them to sputter.
5 Add Carrots and Green Peas, mix well.
6 Gradually add in the rice, water and salt.
7 Bring to a boil, uncovered.
8 Cover the pot, reduce flame to low and let rice simmer for 15 minutes.
9 Remove the cover and stir gently to mix the vegetables and rice.
10 Turn off heat and replace cover until ready to eat.
SERVING
11 Serve hot.
TIP
Using baby carrots cuts your prep time.
Once the pot is covered, don’t keep opening the lid to check on the rice. It will be perfect in 15 minutes without any intervention.
Do all your prep work (chopping, etc) while the rice is soaking — it’s more efficient!
