 2 teaspoons whole-grain mustard
 Cider vinegar2 Tablespoon
 Vegetable oil1/4 Cup (16 tbs)
 Mayonnaise1/4 Cup (16 tbs)
 Sugar1 Tablespoon
 Celery seeds1/2 Teaspoon
 Salt1 Teaspoon
 Ground black pepper To Taste
 1 stalk celery, trimmed and cut into 1/4 inch dice
 1/2 large red bell pepper, seeds and membranes removed, cut into 1/4 inch dice
 Red onion1 Medium, peeled, finely chopped
 Pitted black olives1/2 Cup (16 tbs), sliced
 Corn kernels3 Cup (16 tbs), Defrosted
 Monterey jack cheese4 Ounce
 Flat leaf parsley2 Tablespoon, chopped

Directions

Combine the mustard and vinegar in a large bowl.
Add the oil in a steady stream, whisking continuously until blended.
Stir in the mayonnaise, sugar, celery seeds,salt;and pepper.
Add the celery, pepper, onion, olives, corn, cheese, and parsley.
Toss well, add Tabasco sauce, if desired, and taste to adjust the seasonings.
Line the bowl with lettuce leaves for garnish, if desired.
