| Sugar | 1 1/4 Cup (16 tbs) | |
| Whole Cloves | 6 | |
| Cinnamon | 3 Inch | |
| Whole Allspice - 2 | ||
| Green Food Color or Red Food Color | ||
Directions
GETTING READY
1) Drain out pineapple from the can. Reserve the syrup for later use.
MAKING
2) In a large bowl, mix syrup, vinegar, sugar, cloves, cinnamon and allspice.
3) Bring it to a boil, decrease heat, and simmer for 10 minutes.
4) Mix 1/4 teaspoon food color to the syrup, mixing well as you add.
5) Stir in pineapple and bring to a boil.
6) Transfer into hot sterilized jars, leaving 1/4-inch head space.
7) Seal immediately.
8) If desired, you can have both red and green pineapple by tinting half red and half green.
10) Seal into half-pint jars.
SERVING
11) Use as a garnish on a jelish tray.
12) Use as an appetizer or addition to meat or poultry.
