Colorful Ham Omelette Recipe

Ingredients
3 tablespoons unsalted margarine or butter, divided
1/4 cup finely chopped onion
1/4 cup each finely chopped red and green pepper
1/2 cup (2 ounces) Lower
Salt Ham cut into 1/4-inch cubes
6 eggs
1/4 cup (1 ounce) shredded Lower Salt Cheddar Cheese
Directions
Melt 1 tablespoon of the margarine in small skillet or omelet pan over medium heat.
Add onion and red and green peppers; saute about 3 to 5 minutes, or until tender.
Add ham cubes; heat thoroughly.
Remove and set aside.
Melt 1 tablespoon of the margarine in same pan over medium heat; add 3 well-beaten eggs.
Cook eggs, pulling edges toward center, until almost set.
Spoon half of the ham mixture over eggs.
Cover and continue cooking until set.
Do not overcook.
Fold half of the omelet over other half.
Sprinkle half of the cheese over top.
Gently slide onto serving plate.
Repeat with remaining ingredients.
