Colorful Corn Bread Squares Recipe
Ingredients
Corn Bread
1 egg
1 (16 ounce) carton LAND O LAKES® Light Sour Cream divided
3/4 cup skim milk
1 cup all purpose flour
1 cup yellow cornmeal
3 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon chili powder
Topping
1/2 teaspoon chili powder
1 cup finely chopped lettuce
1 cup chopped tomato
1/2 cup (2 ounces) finely shredded Cheddar cheese
Salsa
Directions
For Corn Bread, heat oven to 400°F.
In large bowl, slightly beat egg; stir in 3/4 cup Light Sour Cream and milk.
In medium bowl, combine remaining Corn Bread ingredients.
Stir flour mixture into Light Sour Cream mixture just until moistened.
Spread into greased 15 X10 x 1 inch jelly roll pan.
Bake for 10 to 15 minutes or until wooden pick inserted in center comes out clean.
Cool completely.
For Topping, just before serving spread remaining Light Sour Cream over corn bread.
Sprinkle with 1/2 teaspoon chili powder, lettuce, tomato and cheese.
Cut into 64 squares; top each square with 1/2 teaspoon salsa.
