Colonial Applejack Muffins Recipe

Ingredients

 
2 Cups Unbleached Flour
 
1 Cup Dark Brown Sugar
 
1 1/2 Cups Grated, Unpeeled Green Apples
 
1 Cup Chopped Walnuts
 
1 Tsp. Salt
 
4 Tsp. Baking Powder
 
1 Tsp. Soda
 
1 Tsp. Cinnamon
 
2 Eggs
 
1/2 Cup Applejack Liquor
 
1/4 Cup Melted Butter

Directions

Blend the first eight ingredients in a large mixing bowl.
Whisk eggs, applejack and butter in a small bowl.
Make a well in the center of dry ingredients and pour in the egg mixture.
Stir quickly until blended.
Spoon into muffin tins, filling to the top.
Bake in preheated oven until brown on top to be sure the apples are cooked.
Delicious and nutritious any time of the day.
Bake at 375 degrees 15-18 minutes
