Colocasia Leaf Dal Parsi Style Recipe
Ingredients
| 5 medium sized colocasia leaves | ||
| 300 gms. pink masoor dal | ||
| 100 gms. red pumpkin | ||
| Brinjal | 75 Gram | |
| 1 tbsp. ginger-garlic paste | ||
| Turmeric powder | 1 Teaspoon | |
| Chilli powder | 1 1/2 Teaspoon | |
| 1 1/2 tsps. Parsi dhansakh masala | ||
| Salt | To Taste | |
| Peanut oil | ||
Directions
Wash the masoor dal twice and place it in a pressure cooker along with water, salt, ginger-garlic paste and the turmeric powder.
Chop the pumpkin and the brinjals and add them to the dal. Wash the colocasia leaves, chop them finely and add to the dal and cook it in the pressure cooker till very soft and pulpy. Pass the cooked dal through a moulee legume and set aside.
Heat 3 tablespoons of oil and when it becomes hot, lower the flame and add the chilli and dhansakh masala powders. Stir for 2 minutes and add the pureed dal and allow to simmer for 5 to 7 minutes. Taste for salt.
Serve hot with white or brown rice, and a cucumber and onion kachumber.
