Ingredients

 
1.5 lbs collard greens
 
1 lb cottage cheese
 
2" piece of ginger
 
2 cloves garlic
 
2 Tbs water
 
1 small yellow onion
 
1 Tbs ghee
 
1 tsp sea salt

Directions

Wash greens, remove tough stems and roughly chop
peel and chop garlic and ginger and blend in processor with water
drain cottage cheese in a strainer over a bowl
bring a large pot of water to a boil add 1 tsp salt
add collard greens to boiling water and simmer for about 25 mins or until
tender, drain and squeeze excess moisture out and chop finely
peel and chop yellow onion, saute onion in ghee in a cast iron skillet ghee
add garlic and ginger puree and greens and cook until heated through add a touch of
salt. In a serving bowl combine cooked collard green mixture with drained cottage cheese
