 Bacon slices/Ham hock5 , diced
 Onion1 Large, diced
 Garlic cloves7 , minced
 Butter1⁄8 Cup (2 tbs)
 Collard greens48 Ounce (collard greens 3 heads, chopped)
 Chicken stock4 Cup (64 tbs)
 White vinegar1⁄4 Cup (4 tbs)
 Seasoned salt To Taste

Directions

MAKING
1. In a large pot, over medium high add the chopped bacon, stir and allow to cook until bacon starts to render, about 5 minutes.
2. Add in the onion, butter and garlic, and allow to cook, stirring for 5 minutes.
3. After 5 minutes put in collard greens, about 1/3 at a time, alternating with little chicken stock at a time, allow to wilt then add next batch.
4. After adding the last bag of the collard greens and stock, add in vinegar, salt, pepper, season salt, and red pepper flakes, cover and allow to simmer on low for about 25 minutes.

SERVING
5. Serve hot.

TIPS
You can add a little more vinegar and some hot sauce if you like
