Bran Muffins Recipe
The California Bran Microwave Muffins is simply yummy! This is a surprise treat that I often prepare at home. Try the California Bran Microwave Muffins at your place too, I am sure you will like it!
Ingredients
1/2 Cup Water
2/3 Cup Whole Bran Cereal
2 Tbsp. Butter or Margarine
1/2 Cup Buttermilk
1 Egg, Beaten
2 Tbsp. Brown Sugar
2 Tbsp. Honey
1 Tbsp. Molasses
1/2 Cup Unbleached Flour
1 /3 Cup Whole Wheat Flour
2 Tbsp. Wheat Germ
11/4 Tsp. Baking Powder
1/4 Tsp. Baking Soda
1/2 Cup Raisins Wheat Germ or Sesame Seeds
Directions
Heat water in microwave on high for one to two minutes or until boiling.
Put bran cereal and margarine in bowl and pour boiling water on top.
Add buttermilk, egg, brown sugar, honey and molasses.
In another bowl, mix flour, whole wheat flour, wheat germ, baking powder and soda.
Combine liquid with dry ingredients.
Fold in raisins.
Spoon into paper-lined microwave muffin pans and top with wheat germ or sesame seeds.
Bake on high for 2 1/2 to 4 minutes, stopping oven and turning pan every minute to ensure even baking.
Muffins are done when tops are nearly dry and bubbles burst on top.
Scratch with a toothpick to see that dough is done beneath the surface.
Remove from pans and cool for five minutes on wire rack.
Bake on high 21/2 to 4 minutes
