Ingredients

 
3 cups finely shredded cabbage
 
1/2 cup green pepper, chopped
 
2 teaspoons caraway seeds
 
1 teaspoon finely chopped parsley
 
1 tablespoon finely chopped onion
 
1 teaspoon salt
 
Freshly ground black pepper to taste
 
1/2 teaspoon dry mustard (or one teaspoon prepared Dijon mustard)
 
2 tablespoons sugar
 
1/4 cup olive oil
 
2 tablespoons red wine vinegar

Directions

Place the cabbage in a large salad bowl and sprinkle with green pepper, caraway seeds, parsley and onion.
Combine the remaining ingredients and beat well with a fork.
Add more oil or vinegar according to taste.
Pour the oil over the cabbage and toss it lightly.
