Cole Slaw Appetiser Recipe
Ingredients
| 8 oz white cabbage, cored and finely shredded | ||
| Celery | 3 Ounce, finely chopped | |
| Onion | 3 Ounce, peeled, finely chopped | |
| 3 oz walnuts, roughly chopped | ||
| Seedless raisins | 3 Ounce, cleaned | |
| Grated rind and juice of 1 small lemon | ||
| 1/4 pint thick mayonnaise | ||
| Oil | 2 Tablespoon | |
| Vinegar | 1 Tablespoon | |
| Dry mustard | 1 Teaspoon | |
| Salt | To Taste | |
| black pepper | 1 | |
| Paprika for garnish | ||
Directions
Put the cabbage, celery, onion, walnuts and raisins in a bowl. Combine the lemon rind and juice with the mayonnaise, oil, vinegar and mustard. Adjust the seasoning to taste. Fold the mayonnaise dressing through the vegetables. Serve on individual dishes, garnished with a dusting of paprika. Accompany with crackers and pretzels.
