Cold Stuffed-Pepper Dish Recipe
Ingredients
| Frozen mixed vegetables package | 2 | |
| 1 recipe Vinaigrette | ||
| Cooked ham | 2 Cup (16 tbs) | |
| Hard-boiled eggs | 10 , hardboiled | |
| 1/2 cup pickle relish Mayonnaise | ||
| 6 green sweet peppers | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cook vegetables according to package directions; drain well.
Mix with vinaigrette in bowl; cover.
Let stand in refrigerator at least 8 hours to marinate; stir occasionally.
Combine ham, eggs, and relish in large bowl; add enough mayonnaise to moisten to desired consistency.
Season with salt and pepper; chill until ready to serve.
Cut tops from peppers; remove seeds and white membranes.
Arrange on serving dish; fill with ham salad.
Drain vegetables; arrange around peppers.
