Ingredients

 
2 t.vegetable oil
 
3 pkgs. (10 oz.) frozen chopped spinach
 
1 t.salt
 
1/2 t grated black pepper
 
1/2 t grated nutmeg
 
1 small yellow onion, peeled and grated
 
1 cup mayonnaise
 
2 t unflavored gelatin
 
1 t lemon juice
 
1 cup heavy cream

Directions

Brush a 6 cup mold with oil; set the mold aside.
Cook spinach according to directions.
Drain well and squeeze out moisture, chop fine.
Place in large bowl, season with salt, pepper and nutmeg and stir in grated onion and mayonnaise.
Sprinkle gelatin over lemon juice to soften.
Set in a pan of hot water and stir until dissolved.
Whip the cream until it holds a shape.
Fold in the gelatin mixture and fold cream into spinach mixture and pour into prepared mold.
Chill 2 hours.
To serve, unmold and use favorite dressing
