Cold Shrimp Bisque Recipe
Ingredients
Condensed cream-of-shrimp soup - 1 can (10 1/2 oz), undiluted
Light cream - 1 cup
Tomato juice - 1/2 cup
Dry sherry - 1/3 cup
Directions
GETTING READY
1) Arrange the ingredients.
MAKING
2) In medium saucepan, place shrimp soup, cream, and tomato juice; mix well.
3) Boil the mixture while stirring constantly.
4) Add sherry; lower the heat, and simmer gently 5 minutes.
5) Keep aside to cool.
6) Cover the bowl and keep in refrigerator to chill for several hours or overnight.
7) Stir very well just before serving.
SERVING
8) Garnish each serving with chopped parsley or dill and a whole shrimp, if liked.
