Ingredients

 
3 pounds fresh Chinese egg noodles, 1/16 inch thick, or comparable Italian or American egg noodles
 
6 tablespoons sugar
 
2 to 3 tablespoons hot chili oil 3 inch piece fresh ginger,minced .
 
1/2 cup plus 2 tablespoons sesame oil
 
3/4 to 1 cup thinly sliced scalhons
 
7 1/2 tablespoons light Chinese soy sauce or Japanese soy sauce
 
Additional scallions, thinly shced for §armsh
 
4 1/2 tablespoons balsamic or rice vinegar

Directions

Cook fresh noodles in boiling water for 2 to 3 minutes.
If noodles are dried, follow package directions.
Chill immediately under cold running water.
Blend remaining ingredients except garnish and stir gently into noodles.
Refrigerate at least 1 day for best flavor.
To serve, stir noodles and sprinkle with scallion.
NOTE TO COOK: Carry to party either in storage container or in serving bowl, depending on whether guests will help themselves to noodles or noodles will be served on individual plates.
Either way, carry the garnish separately and add it at serving time.
