12 oz Soba Noodles
large pot of water
1/3 cup soy sauce (low sodium)
1/3 cup brown rice vinegar
1 tsp toasted sesame oil
1 clove garlic, minced
finely chopped or shredded carrots
juice of 1 lime, and zest from 1 lime
1 tsp sugar (white or brown)
1/2 tsp crushed red pepper
How to make Cold Noodle Salad
cook noodles according to package directions
(about 5 mins, drain and rinse in cold water)
Combine all dressing ingredients with a whisk, add noodles
and toss. Serve at room temperature or cold.Garnish with 2 tbs chopped
roasted peanuts and fresh chopped cilantro or green onion if desired
