Cold Mackerel Spanish Style Recipe
Ingredients

| Dry white wine | 3/4 Cup (16 tbs) | |
| Vinegar | 8 Tablespoon | |
| Olive oil | 8 Tablespoon | |
| Thyme, tarragon, crushed | ||
| Bay leaf | ||
| Lemon | 1 , sliced | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Place the cleaned fish in a large pan.Peel the tomatoes and chop them ipto medium sized chunks.
Seed and chop the pepper and mix finely chopped scallions and tomatoes in a saucepan.Slice the lemon into thin slices and add to the vegetable mixture.Add the dry white wine, vihegar and olive oil.
Season with salt and pepper and add the other seasonings.
Cook for 15 minutes and pour the hot mixture over the mackerel.Put the pan containing fish over a medium heat and bring to the boil: Lower the heat and cook fish for 10 to 15 minutes.
Cool then chill at least 2 hours, garnish with sliced lemon.
