Cold-Cut Roll Ups Recipe
Ingredients
1 small head cabbage (about 2 pounds)
2 tablespoons sugar
2 tablespoons mayonnaise or salad dressing
2 tablespoons light cream or table cream
2 tablespoons lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup (1 stick) butter or margarine
1 teaspoon prepared mustard
6 large slices rye bread
2 packages (6 ounces each) assorted Italian cold cuts
6 sweet yellow wax peppers
Directions
Shred cabbage into a large bowl (There should be about 8 cups.).
Sprinkle with sugar; chill at least 30 minutes.
Blend mayonnaise or salad dressing, cream and lemon juice in a cup; pour over cabbage.
Sprinkle with salt and pepper; toss lightly with two forks to mix.
Blend butter or margarine with mustard in a small bowl; spread on bread.
Drain coleslaw.
Spoon about 1/4 cup on each slice of meat; roll up.
Pile on bread, dividing evenly.
Garnish each with a pepper.
