Ingredients

 
4 crookneck squash trimmed and sliced (about 1 1/2 pounds)
 
1 medium sized carrot peeled and sliced
 
1 large onion chopped
 
1 leek sliced (white part only)
 
2 cloves garlic minced
 
3 cups chicken stock (or 3 cups water and 4 bouillon cubes)
 
1/4 teaspoon ground cumin
 
1/8 teaspoon ground nutmeg
 
dash Tabasco
 
salt to taste
 
1/4 cup low fat yogurt
 
chopped chives or minced parsley

Directions

Place in a large saucepan the squash carrot onion leek garlic, chicken stock, cumin, and nutmeg.
Cover and simmer 15 minutes.
Add Tabasco, turn into a blender container, and puree.
Add salt to taste.
Chill.
Serve with yogurt and chopped chives.
