Cold Cream of Asparagus Soup Recipe

Ingredients

 
1/2 pound fresh asparagus
 
1 1/2 cups water
 
1 sliced onion
 
2 chicken-bouillon cubes
 
2 tablespoons quick-cooking tapioca
 
1 (10-ounce) can cream of chicken soup
 
1/2 cup light cream, Salt and pepper to taste

Directions

Wash asparagus, and discard tough ends.
Simmer in water with onion and bouillon cubes 10 minutes.
Add tapioca, and simmer 5 minutes.
Pour into blender, and blend 30 seconds.
Add soup and cream, and blend 10 seconds.
Season to taste, and chill well.
