Ingredients

 
1 lb (450 g) eggless curry-flavored noodles
 
6 cups (1.5 L) vegetable stock
 
1/2 lb (225 g) chicken breast, steamed and shredded
 
1/2 lb (225 g) fresh bean sprouts, roots removed and blanched
 
1 English (seedless) cucumber, cut in half lengthwise and shredded
 
1 tsp (5 ml) chopped garlic
 
1/4 cup (60 ml) vinegar
 
1/4 cup (60 ml) salt-reduced soy sauce

Directions

1 Cook noodles in boiling stock 4 minutes. Drain and cool, discarding stock.
2 Combine chicken, bean sprouts and cucumber. Add garlic, vinegar and soy sauce. Add to noodles, toss to blend.
